It's a technique that's become almost synonymous with Polly's - their patented pyramid dry-hopping technique brings their beers completely to life.
By going big and gradually tapering down the dry-hop bill they're able to accentuate each individual flavour profile of these incredible varietals; creating what they feel to be a much more complex and enjoyable drinking experience.
Polly's have adapted this technique again in Made For Flight; the same basic technique employed - a three hop line up gradually decreasing, but they've gone bigger on the base layer - Mosaic offers a huge wide hug of tangerine, berry, and mango notes, before herbal crisp lemon notes come to the fore from Columbus, before rounding off with huge grapefruit notes from big C hop Comet.

Primordial is a highly sessionable 4% hoppy pale ale with a bright and fruity aroma that gives way to a crisp and light body.
Brewed with Norwegian super yeast Voss Kveik, the Simcoe-only hop character is supported by bready and stone fruit esters from the yeast.
The addition of dextrin malt and flaked oats give the beer a body that balances the bitterness whilst retaining a lightness that inspires another sip.
Primordial is unfiltered with a natural haze (meaning it is suitable for vegans). Best enjoyed when stored cold and drunk as fresh as possible.
