The beer has a New England IPA base of wheat and oats for mouthfeel, which we backed up by milk sugar. The wort was kettle- soured overnight before adding a generous helping of Citra BBC in the whirlpool. We then hit the beer with multiple barrels of pineapple, mango and papaya mid-fermentation, all finished off with a touch of vanilla, and plenty more Citra BBC in the dry hop to add another layer of vibrant tropical flavour.
