The Rodenbach Grand Cru is the archetypal Flanders red-brown beer. Each of these beers is a unique blend, but they all share a brewing process characteristic of the area surrounding Roeselare and Kortrijk.
The typical sweet and sour taste of a Rodenbach Grand Cru is produced by a two stage fermentation process called mixed fermentation, involving top-fermentation and bacterial fermentation using lactic acid bacteria. The Rodenbach Grand Cru matures in oak foeders, or barrels, over a period of two years, giving the beer a unique, complex fruitiness that is reminiscent of wine.
Rodenbach, the mother beer, is usually one-quarter mature beer to three-quarters young beer. When it comes to Rodenbach Grand Cru, the blend is two-thirds mature beer with one-third of a young brew added.
The 'roodbruin', or red-brown beers, of Flanders can be traced back to the Middle Ages. At that time, hops, the modern preservative ingredient in beer, had yet to reach Belgium but brewers knew that beers containing lactic and ascetic acids kept for longer. This gave rise to the tradition of sour beers, made by cutting a young and newly fermented beer with an older beer that has finished fermenting. The bitterness of hops is barely discernible in this style of beer.

...still brewed to an authentic beer recipe from 1679 originating in the former Carmelite monastery in Dendermonde. Written over 300 years ago, this recipe describes the use of three kinds of grain: wheat, oats and barley.
look: Tripel Karmeliet is a very refined and complex golden-to-bronze brew with a fantastic creamy head. These characteristics derive not only from the grains used but also from restrained hopping with Styrians and the fruity nature (banana and vanilla) of the house yeast.
smell: Very refined and complex. Hints of vanilla mixed with citrus aromas.
taste: Tripel Karmeliet has not only the lightness and freshness of wheat, but also the creaminess of oats together with a spicy lemony almost quinine dryness.

Lindeman’s Cuvée René is - without a doubt - the queen of gueuzes.
A blend of old and young lambics matures in large oak barrels and then undergoes a secondary fermentation in champagne bottles to achieve a dry finish with an effervescent carbonation.
Aromas and flavours of “dusty barnyard” and “earthy funk” can sound somewhat off-putting, but the notes of sour apple, lemon, and wood in this gueuze complement them nicely. Its lasting sour finish and medium body make this beer more adventurous than one might think.

Straffe Hendrik Quadruple is a rich and intense dark Belgian ale. It is brewed with a subtle blend of specialty malts, which give the ale an extremely dark color and a chewy, malty complex character. The quadruple combines a clean dryness with a warm full bodied mouth feel and essences of fruit. Secondary fermentation in the bottle creates a living ale that can be aged and will have an evolution of taste profiles over time.
It is brewed by the last active brewery in the historical city of Bruges. The town archives first mention the brewery in 1546. Since 1856, the famous brewing family Maes-Vanneste has owned the brewery.
